Tiramisu met mango

Beleg de bodem van een schaal met lange vingers. Verdeel hierover de mango jam. Mix in een kom de suiker met de mascarpone en Skyr. Verdeel dit over de mango jam en strijk dit mooi glad.

Laat de tiramisu minstens 2 tot 3 uur in de koelkast opstijven (een dag kan ook). Schep voor het serveren het cacaopoeder in een zeefje en bestuif de tiramisu met de cacao. Je krijgt het mooiste effect door met een lepel of mes tegen de rand van het zeefje te tikken. Je kunt in plaats van cacaopoeder ook chocolade raspen en er overheen strooien.

Hmmmm lekker!

ingredients voor 3 pers.

•    1/2 pak lange vingers
•    1 portie mango jam van Mo!
•    60g suiker
•    250g mascarpone
•    150g Skyr
•    Cacaopoeder of melkchocolade  

      schaafsel ter garnering


Quesadillas with Feta, avocado & pesto

Spread some pesto and parsley or coriander on each tortilla. Remove the avocado halve and remove the pulp with a tablespoon. Cut into slices and place two or three of them on the pesto. Crumble feta over it and fold the half of the half and press a bit. In a pan, heat some vegetable oil and fry the crisps from both sides crispy. Drain on some kitchen paper briefly and then bite quickly.

 

 

ingredients

8 small tortilla dishes
2 avocados
150 g of Feta
250 g  Mo pesto
Some olive oil
Juice of a lemon
Some parsley or coriander, finely chopped


Caribbean SPICY LOMITO SKEWERS WITH MANGO JAM

Place the Lomito in a bowl and mix in the pesto, salt & pepper, leave it for 1/2 hour in the fridge. Put a frying pan on the fire and put some chili oil in it, add the lomito and cook them till well done. When they are ready place them on a piece of kitchen paper & put them on the skrewers. Serve with sweet Mango jam.

Chili Oil or Olive Oil

15 cubs of Lomito (tenderloin)
2 tablespoons Pesto

2 tablespoons Mango Jam
Salt & Peper
Skrewers

Nice plate to serve


Mo! homemade mango Jam Swirl Crumb Cake

It is a fabulous crumb cake. You can pretty much use any fruit, but mango's are particular nice this time of year. So far, I have made this recipe using raspberries, strawberries and blueberries and they have all been delicious. You really cannot go wrong with this recipe.

 

 

Preheat oven to 180 C / Gas 4. Grease a 23cm square cake tin. Measure the soy milk and add the apple cider vinegar then set aside to curdle.

 

In a large mixing bowl, resift the flour with the baking powder, salt and 50g of sugar. In a separate bowl, combine the curdled soy milk, sugar, sunflower oil and pure vanilla extract. Pour liquid mixture into the flour mixture and beat until smooth. Spread mixture in tin. Drop dollops of jam on the mixture and use a knife to swirl it in.

 

In a small bowl, combine flour, sugar, sunflower oil, cinnamon and nutmeg. Mix with a fork until mixture resembles breadcrumbs. Sprinkle over top of cake mixture.

 

Bake in preheated oven for 20 to 25 minutes, or until a skewer inserted into the centre of the cake comes out clean. Cool slightly before serving.

160g self-raising flour
50g caster sugar
2 teaspoons baking powder
1/2 teaspoon salt
180 ml soy milk
120 ml sunflower oil
1 teaspoon apple cider vinegar
1 teaspoon pure vanilla extract

100g Mo! homemade mango jam

 

For the topping:
125g all purpose flour
70g brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
60 ml sunflower oil


Cheesy Pesto Pull Apart Bread

This Cheesy Pesto Pull Apart Bread is one of my go to recipes for a party or when we want a great snack for a movie or football game. It is deceptively simple to throw together and WOW does it taste good. You will be guaranteed to impress your friends with this one!.

 

Preheat oven to 350 degrees F. Cut each biscuit into quarters. Place in a greased oven safe baking dish.
Spread the Mo! Homemade pesto over the top of the biscuits, being sure to distribute evenly. (I used a teaspoon to spread mine out in small dollops)  Spread the shredded cheese on top of the biscuits and pesto. Top with the Parmesan cheese. Bake in the oven for 25-30 minutes, until cooked through and cheese begins to brown. JUMMIE
